On Earth Day six years ago we were traveling full-time in our Airstream. We were visiting Spokane Washington for the first time and I took my then four and one year olds to a cute museum right down town. Not even knowing they were doing an Earth Day celebration, we showed up so surprised to learn all about the magical world of earth worms and helped clean up garbage in the city. When we went back to the museum they shared "earth cups" with everyone. Pudding topped with "dirt" and "worms".
We camped at this really beautiful state park called Nine Mile Falls. It was so peaceful and just a little ways out of the city.
In our family our biggest contributor to mama earth is choosing a plant-based lifestyle so we graciously left the dairy filled cup that were so kindly offered but we were inspired to go home and recreate our own. So! Just as so many other unexpected experiences while traveling, this one too changed our life in some little way. We have made own earth cups every year since.

We typically enjoy eating our earth cups before lunch or dinner to switch our normal rhythm up a bit to feel special. We top them with "snow" to honor the past winter.

RECIPE:
- 1/2 c Chia Seeds
- 1/4 c Cacao Powder
- 1/4 c + 1 TBSP Pure Maple Syrup
- 1 3/4 c Milk Alternative
- Optional Toppings. We like coconut cream (ice), dairy free chocolate chips (rocks), shredded coconut (snow) and sometimes we make "worms" by splitting a little organic soft candy and rolling them.
METHOD:
- Blend all the pudding ingredients in a high power blender.
- Let sit in the fridge for 2+ hours.
- Serve and share your favorite memory of mother earth this past winter.
Then for the next meal we eat something really fresh to welcome spring and honor mother earth for all she gives us.
Are you obsessed with bowls like I am? I could write a whole cook book on just plant-based bowls. I cannot wait to share my new earth bowl with you today.
RECIPE:
- 4 Kale Leave (chopped)
- 1 c Purple Cabbage (chopped)
- 1 TBSP Red Onion (finely chopped)
- 2 Mandarin Oranges
- 1/2 Lemon
- 1 TBSP Olive Oil
- 1/4 tsp Salt
- Avocado
- Rice or Buckwheat Ramen Noodles
- Tofu (Recipe HERE)
METHOD:
- Add kale, cabbage and onion to a largo bowl.
- Squeeze the juice from 1/2 lemon and 1 of the mandarin oranges right onto the kale, cabbage and onion.
- Massage olive oil and salt into the bowl. You want everything to soften together.
- Cut the other mandarin orange into little bites and add to bowl.
- Stir and set aside.
- Prepare rice or noodles.
- Prepare tofu.
- Assemble bowl and top with a little extra tamari if desired.
- Enjoy and say an affirmation for mama earth.
